Favorite cookies to bake?

[personal profile] tamabonotchi 2013-06-19 11:36 pm (UTC)(link)
I've been waiting for my sister to scan and send the recipe for marble cookies from the her cookbook because I couldn't find recipes online that looked good and I just NEED THESE COOKIES.

What are your favorite cookies to bake?

I am the worst at cookie baking. I bake all the time all sorts of stuff but cookies are beyond me. They turn out flat or gooey or burnt and gooey and I find cooking them so booooring. Which is why my favorite cookie to bake is chocolate chip cookies that I then slather the entire thing onto a baking sheet and cook as one giant thing. Delicious and time saving!

I am also the worst at cookie baking! They never turn out. I will have to try your one-giant-cookie thing, maybe that will work for me too.

Hahaha, I don't think I'm that great either compared to when my sister bakes, but somehow my marble cookies turn out fine.

You can never go wrong with good old fashion chocolate chip cookies. However, I've been on a banana walnut chocolate chip binge of late. So good.

I'm really bad at baking, so those really easy peanut butter cookies where it's just peanut butter, sugar, and an egg. Because they're the only kind I can make.

Dude, I'm not a bad baker, but those cookies are still awesome--I posted a recipe downthread that adds some vanilla extract and chocolate chips. I may die young of a heart attack, but made with chocolate chips those things just might be worth it. Also, maybe practice baking by playing with that recipe (what happens if you use different nut butters, for example? Almond butter with dried cherries or something) Taking a simple recipe and stretching it was how I learned to cook and bake; I gussied up boxed cake mixes and packaged ramen and stuff for a couple years, and now I can do sponge cakes and sourdough bread and all kinds of stuff, because I just kept pushing. Just be careful with meat and raw eggs and wash all your fruit and veggies, and most of your mistakes will still be edible.

Er, sorry. Maybe you don't want to put a bunch of effort into baking, and that's fine. Just, if you do, baking isn't magic; practice and you'll get better.

Chocolate chip. Or even better, chocolate chocolate-chip. Yes...

fuckin' snickerdoodles! they're just so delicious, especially my family recipe. you can get chocolate chip from anybody and they'll taste alright, but it's not just anyone who can create a worthy snickerdoodle. thankfully, the cookie gods have bestowed this power upon me.

I like to bake either whole wheat chocolate chip cookies or olive oil CCC. The olive oil ones I've had kinda varied results with, depending on the oil used- orange olive oil tasted amazing but the dough was much stickier than it was when I'd previously made them with plain EVOO. The whole wheat ones are very reliably delicious and easy to make.

My favorite homemade cookies to EAT, however, are either polka dots (butterscotch chip cookies with marshmallows on top) or poppy seed hamantaschen. Both of which are much more complicated to make, and thus I only have at Hanukkah/New Year's and Purim respectively. All the hamantaschen are delicious and complicated, but the poppy seed dough is my favorite- we also make chocolate, orange, and whole wheat dough; with poppy seed, raspberry (my favorite), apricot, prune, and chocolate fillings.

There was this one cookie recipe I loved as a kid but I lost the recipe years ago. It was an oatmeal cookie recipe with dried cranberries, white chocolate (and possibly also dark chocolate?), and some sort of nut. It sounds busy, but the flavors and textures actually complimented each other pretty well. Or at least, my kid self thought so. They were really fun to make because I only ever got to mix things and having all those different ingredients made mixing not boring.

No bake cookies are my favorite to be honest. And non-cookie, cracker candy is good. :D

I am all about the vanilla shortbread domes, but I also enjoy making the big chocolate chunk cookies that end up about four inches wide after they've spread during baking - and everyone else around here seems to prefer the latter, so I make them more often.

Do lemon bars count? When Meyer lemons are in season I totally rock the lemon bars, too. And pecan bars. Damn, now I want to go make some pecan bars and then eat them all myself. Damn you, FS!

Dude, everyone keeps mentioning cookies without providing recipes, what's with that?

Peanut Butter Chocolate Chip cookies (or Heart Attacks, I guess):

preheat oven to 350° F

dump 2 cups of peanut butter (the stuff that's just peanuts and salt, 2 cups equals one 16 oz. jar), 2 cups of sugar (if you can get the superfine stuff, try it), 2 tbs or so of vanilla, and 2 eggs in a bowl and mix. Add as many chocolate chips as you can cram in (I generally dump a 12 oz. bagful in, the last time I made these I used half chocolate chips and half caramel bits) and make into 16 balls. Flatten them out a bit on some cookie sheets (I use parchment paper, but greasing the cookie sheet or using foil is probably fine) and bake for 8 minutes. Let them cool a bit so they firm up.

These are great with milk, if you drink milk, and you can leave the chocolate chips out, but why would you?

Shortbreaaaaaad!! I love shortbread, and the ones I make are literally 'melt in your mouth'. And occasionally 'crumble all over the cooling racks' because they're so delicate. XD

Recipe:

1 lb. butter
3 cups flour
1 cup icing sugar
1/2 cup cornstarch

Oven 350 F
Beat the shit out of those ingredients with the mixer.
Cook for 8-10 minutes.
