She's super good at everything, but still needs ~a man~ to be complete/becomes helpless/overly depends on a man once he's around, etc?

At least, that's the only thing I can think of, but I've never read them either.

Nope, she saves everyone, including Geralt and defeats the notorious witcher hunter Leo Bonhart, despite being an inexperienced fighter. And she's in a relationship with a woman. OP has a point that she's a little overpowered, but no more than Harry Potter and you don't hear about him being called a Gary Stu.

I should also add that she's physically disfigured and has deep flaws which are often called out by other characters (at one point her arrogance ends with her falling into the hands of her enemies and watching all her friends get brutally murdered right in front of her).

Nothing about her says "Mary Sue" except for the whole Bonhart affair. But he was her nemezis and the murderer of her lover, so if it were anyone else who killed him, it would make her arc meaningless.

Perhaps you should read them. You'd notice she doesn't need *a man*. Sure, she needs help against the Big Bad, but even Geralt and the other male main characters sucked at fighting him, and he repeatedly wiped the floor with Geralt's posse -- it doesn't demean her in any way. AND she finishes off the Big Bad's most impressive henchman all by herself, with ice skates! And the reason she likes to cling to Geralt (and he in turn is very clingy about her!) is because he's basically the only true father she's ever known and he considers her the daughter he could never have. The plot that gets it all started in the books is actually a quest to reunite her adoptive family.

Also, the only romantic relationship she has in the whole series is with another girl (their relationship is a bit fucked up, yes, but then most of the characters in the books are pretty fucked up).

I found her a far more believable as a character than a lot of other young girls in fantasy literature.
