My opinion is that Clint/Coulson has even less canon backing, but the pairing has less of a tendency to be accompanied by warped characterization not only of the characters involved, but of everyone else in the fic.

If that's so, then why does it seem like half the Clint/Coulson fic I've read turns Clint into a delicate flower in need of protection?

That is definitely not the case in the vast majority of Clint/Coulson fic.

Because you're reading bad fic, obviously. I can give you recs if you need them, but I think it's more likely you just don't want to read the good fics for that pairing. And that's fine.

I really don't think that's my problem. At this point I've read 50+ Clint/Coulson fics, most of them written by my favorite authors from other fandoms and/or recced by bethbethbeth (whose tastes usually align with mine). As stories, they tend to be very good: well-written and excitingly plotted and so forth. But a disproportionate number of them feel like Coulson/OMC fic to me because of how weak and even pathetic a character Clint is in them.

That was my impression as well. I've read maybe a dozen, all either from authors I like or otherwise recced. I started avoiding this pairing because I can't stand to see Clint as a woobie who depends on Coulson to function.
