I am late to this, but I just have to say: this is almost certainly an issue of the first anime vs. brotherhood. In the first anime Riza had an eye color closer to whiskey than brown.

Those fanartists are probably fans from the first anime that either did or didn't migrate to brotherhood, or possibly just saw clips/pictures and liked it better.
