Legend of Heroes: Trails in the Sky. I really liked it. It has lots of quests and an interesting story, and a fun battle system where you can customize your attacks using what's basically an elemental pocket watch.

Though right now I'm on my 3rd attempt to beat Tales of Phantasia, as well as Suikoden I. I'm really slow at games. T__T
