I had to get a graft when my gums receded too much, and I didn't have to go to a hospital but a specialized dental office that offered the service. I was given the option of getting drugged up but remaining conscious or getting knocked out entirely, which I personally chose the latter. they just take a piece off the roof of your mouth and graft it onto the gums. I've heard the pain/healing process is similar to getting your wisdom teeth removed but I haven't gotten mine out so I can't say for sure. it did suck though.
that's most of the information I can remember, at least the ones that addressed your concerns. it was a long time ago for me so not sure how accurate it is but it'll give you a place to start, maybe?
