In my opinion Rarity and Applejack are the only characters in the FiM line-up who really break the girl stereotypes.
The Fim fandom loves to bash the older gens for having 'such stereotypical' girl characters and yet in FiM we have 'cute feminine girl', 'awkward nerd', 'tomboy' and 'party/genki girl'. When I want to see those I can always watch MLP Tales.

A girl who is a fashionista but NOT presented as a vain, selfish asshole who actually cares more about her friends than herself and a girl who does lots of physical labour and is concerned about the future of her family business are not seen as often in my experience.

That's why I like them best. They're refeshing.
I'm not saying the others are bad or stupid. I like them all somehow. But Rarity and Applejack are simply characters I don't see every day in media geared towards girls and I'm sad they don't get as much merchandise as the other four :(

and they both have businesses! how awesome is that?

They're both my fave too and I wish they had more merch as well. I like them because they're practical and creative.

Fluttershy seems too much like a cliche to really stand on her own and it seems that way with most of the cast too. Yes it's for children but I'd like to think Rarity and AJ have more depth than the rest hehe.
