I'm genuinely curious, because I've seen this response a number of times, as to why a lot of times when something is pointed out as male gazey and "patriachy!!", someone will say, "but what about lesbians?" I feel like they're two different things, but I'm not quite sure how.

Because that shit is not made for us, it's made for men. Us lesbians/bis can tell the difference, case in point, "lesbian" porn. We may or may not decide to enjoy the t&a but we can get uncomfortable too if it's objectifying in a yukky way. Depends on the queer.

I may not be an expert on the matter (I'm straight), but I get really suspicious of fics where the lesbian action is basically from the POV of "All men are assholes so I'm gonna sleep with only women! Except [Male Hero], he's not an asshole." and eventuates with said male hero gaining a harem of girls who not only sleep with each other, but worship his cock as well.

(This is a very sarcastic description of a real fanfic, currently still being written. I tend to think it's a male writer writing out all his fantasies.)

Honestly as a queer woman, I rather see female characters given the same respect, creativity and capabilities given to males characters than fanservice. I'd root for legitimately ugly female characters who can be awesome because it's some place creators and designers are afraid to go. Yet it adds diversity, and overall builds a better world for a story.
