I just wanna corroborate this, because I've experienced the same thing. I haven't cut out meat completely, but I've reduced it by a significant amount, and when I do have it, it's typically poultry or fish; I've had red meat perhaps four times in the past year and a half. Prior to the change, I'd poop maybe two or three times a week, and it was uncomfortable. Now, I poop daily, and I don't really feel any gastrointestinal discomfort.

I used to dismiss a lot of claims about the unhealthiness of meat ("we're omnivores, right? Hello!"), but my experiences over the past year and a half have kind of changed my mind. Meat isn't all bad, but we should be eating a lot less of it than we do.

Meat isn't the only thing people in developed countries should be eating less of.

The most noticeable benefits to my dietary changes have coincided rather strongly with my reduction in meat consumption, so that's what I tend to focus on in discussion. But it definitely is true that overindulgence in meat isn't the only problem. Our diets are pretty out of whack in general.

too much sugar (especially substitutes) and salt (we really don't need as much sugar and salt as we typically consume), flavor enhancers, that sort of thing is a good place to start

These two are both waaaaaaaaaay more prevalent in food than people realize, too. You really have to stay on top of it, because salt and sugar get packed into things you'd never expect. And for people with budget limitations, too, who might buy a lot more canned/frozen food because it won't go bad and thus there is less waste, it's really tough. Those kinds of food are so full of salt and sugar it's crazy. I'm currently feeding only myself and on a student budget, so I really don't eat my food that quickly, and I've ended up leaning a lot on preserved types of food. Because it's been hard for me to do things like finish an entire loaf of bread, or eat a whole pack of tomatoes, or whatever. I've gotten used to cutting roots off my potatoes any time I need them, and cutting mold off my blocks of cheese. So I keep the preserved stuff around in the event that I find something has gone bad, but I can tell the difference almost immediately after I eat, when I feel really heavy and blughghghghgy.
