Henry/Olivia is a ship that is a fantasy. It's a reparative relationship that some want to believe in, because it's nice to imagine that some of the Henries of the world can overcome their problems to the point that they become good parents. In the real world the prospects are grim and the process is so long and fraught with complications that only an entire show dedicated to the topic can truly do it justice (see: Revolutionary Girl Utena). But sometimes it's nice to have the simple, sweet myth that you wish were true.
That said, while I think it's popular because of its sappy potential when played straight, I personally like imagining the unspoken conflict that must follow their marriage. Anyone Henry marries, he marries in far less than a year, since he comes post-timeskip. Given a guy as complicated as him, that's just asking for disaster.
I've also got a fic about this but maybe I shouldn't gloat about it since I've been putting off the final edits for forever.Anyway, personally I think Henry's Panne supports are the best done. It shows every side of him, often in the negative light it deserves, and Panne's reaction is charmingly realistic. But while I feel that they are the best in terms of craft, they are not my favorite, which unfortunately isn't something for the rational part of me to decide. In any case, Henry/Panne has a beautiful piece of work over here, have you seen it before?
Also I feel like I should mention that I honestly think that in E!Fandom, we may be outnumbered by Henry/Ricken fans.
