in this series the apocalypse has happened and as far as we know there's literally only one surviving human that's not white. (to clarify, the surviving human population of earth is one big city)

That's not accurate, actually. A lot of the characters are of mixed heritage. It's just that Mikasa's mother was the last person of Asian heritage that wasn't mixed. Does that make sense?

Ymir, for example, has very dark skin despite having a traditionally ~nordic~ name.

It's basically like America on a smaller scale. People of every race and culture were crammed into one giant city. Yeah, the majority of them are 'white', but at this point, all the different races have just interbred like crazy.
