In this week's baking adventure, I made yummy jack & coke brownies. Jack Daniels seems to be a great flavor and can't wait to cook more with it.

Anyone else want to share fun things they've made?

I've not made them yet, but I found this recipe for chai scones that I need to try.

My favorite are these cream cheese cookies my mom taught me when I was a kid.

The chai spiced scones sound like something that would be perfect during the fall/winter season when it's snowy out.

Yesterday, I made a chocolate yogurt bundt cake. It's one of my standard recipes. So tasty.

Yogurt Chocolate Bundt Cake:

1/2 cup butter
1 1/2 cups sugar
2 eggs
2 cups all purpose flour
2/3 cups cocoa
1 1/2 tsp baking soda
1 1/2 cups plain yogurt (I use greek to make it extra dense and moist)
1 tsp vanilla
1 cup chocolate chips can be added to make it extra chocolatey

In a large bowl mix butter and sugar until light and fluffy. Beat in eggs one at a time. Sift together flour, cocoa and baking soda. Add to batter, a third at a time, alternating with yogurt. Stir in vanilla. Spread batter into greased and cocoa'd bundt pan. Bake at 350 F for 50-55 minutes. Cool in pan on rack for 10 mins.

do you use all natural cocoa powder or dutch process cocoa powder (I have recipe for Dutch process and in the US that's much harder to find)

I think natural? Just make sure it is of good quality. If it's cheaper cocoa, the cake will taste off/chalky, as bad cocoa will taste.

I reaaaally like this cake and make it quite a lot. Also cookies. And vanilla cakes with lots of fruit in. And toffee, if that counts. And flapjacks, which for the uninitiated are oats held together with sugar and butter. And ginger cakes, but I've not made one in a while as getting hold of stem ginger preserves is too damn hard.

I buy them for $4 a bag at Trader Joe's. Probably a waste of money but it's the cheapest place I've found to buy them pre-ground.

I also don't separate the eggs, for I am lazy and it really isn't necessary, and nor do I fuck with cake testers, for they lie to me and 45 mins is always perfect anyway.

I was going to make a blueberry pie yesterday, but I discovered that I hadn't bought enough blueberries (all the recipes called for 5 to 6 cups, and I had a scant 4), so I made a blueberry buckle instead. I used a cake flour blend instead of all-purpose, and it came out great.

I'm currently waiting for the dough to rise and then I'll make Belgian waffles! They're made with yeast dough and big sugar crystals and are very sweet but super delicious!
