One of my favourite foods are things you can make in big heaps in a pan or wok. This is one of my favourites. You'll need: Diced chicken or turkey breast. Spinach (frozen or fesh). Chickpeas (canned, drained & rinsed is easiest). Diced toasted white bread. Very important: Sesame oil, best would be some hot sesame oil with chilli peppers but you could also use chilli powder. Some sour cream. Optional: Some roasted pine nuts.

Fry the chicken/turkey. Add the spinach. Add the chickpeas. Add seasoning (the usual - salt, some black pepper, some chilli powder if you want). Add sesame oil (that's the main seasoning for this). Add some sour cream. Once everything's in, add the bread and let it soak up the gathered liquids.
Serve with some roasted pine nuts sprinkled on top or without.
