Food-specific bucket list

Anyone else have one? I got to cross "cook lamb" off of mine earlier this week (eaten it before, but never made it myself). Up next is cooking a whole duck, but I have to wait until my parents go on extended vacation because the only recipe I have is multi-day. Most of the rest of the list is just animals I haven't eaten yet (and also kohlrabi, which I just keep forgetting to look for at the nicer grocery store).

I want to try alligator at least once, which is weird, because they're one of my favorite animals. Why do I want to eat one of my favorite animals?

Okay, this is a weird one, but: rat.

I once hear there's a restaurant in China that only serves rat, in different preparations, and now I'm just really curious.
