Kakarot, like all Saiyan names (at least in the Japanese*), is a pun on a vegetable - carrot, in this case. (Vegeta is from vegetable, Nappa is a type of cabbage, Raditz is from radish, and so forth.)
Son Goku (his full Earth name) is the Japanese name for Sun Wukong, the Monkey King from Journey to the West, of which Dragon Ball was a parody back when it started. His flying cloud and extending staff are further references to Wukong.
* A couple were lost in dubbing...Bardock is the only one of his crew to keep his original name, and thus the vegetable pun in the English dub of the movie they appeared in, IIRC, for instance.
