Well, there's a few.

A GOOD modern-day Phantom of the Opera AU where the new Christine is not a Mary Sue and the exploration of the Erik/Christine relationship is actually interesting. Or really any interesting takes on the beauty/beast dynamic.

Well written smut where Jack Harkness is a bottom (either with a guy or involving strapons).

Spike/Angel/Buffy OT3 fic post show finale.

Luke Skywalker/Mara Jade smut that somehow involves his prosthetic hand. Expanding from there, any prosthetic-centric smut, either het or slash, I'm not that choosy.

Also anything with gender reversed Katawa Shoujo.

Genuinely poetic/touching fic for Spirited Away (non-smut)

Chamber-centric Generation X fic.
