Thirding Princess Tutu, it's one of my favorite series. I'll also add Mawaru Penguindrum (24 eps) and Haibane Renmei (13 eps).

For a shouenen fighting series that doesn't go on forever: Soul Eater. It's 51 episodes but still shorter than most series of its type. And as a bonus, as of about a month ago the manga is actually finished.
