A few short ones (all under fifteen episodes) I'm really fond of are Puella Magi Madoka Magica, Kino no Tabi, Mermaid Forest (2003), Mononoke, Mahou Tsukai Tai, Baccano!, and Suisei no Gargantia. Two current shows I'm watching right now are thirteen episodes, and they're both pretty great; Gatchaman Crowds (I adore this one!) and Kamisama no Inai Nichiyoubi (uneven storytelling at times but a cool world and gorgeous animation).

For twenty-six episode shows; Cowboy Bebop (of course), Trigun, Fate/Zero (no knowledge of Fate/Stay Night necessary), Gankutsuou, Macross Frontier, Mawaru Penguindrum, Psycho Pass, Princess Tutu, Mushishi, Fullmetal Panic (has a thirteen episode sequel), and Gurren Lagann.

Longer but not crazy long series I'll keep to a few. These are my absolute favorites of those- Twelve Kingdoms (about 40 eps and absolutely brilliant), Slayers (three seasons, twenty-six eps a piece, although to be honest the first two are the good ones, and two new thirteen episode seasons a few years back), Gundam Seed (to me the best Gundam series, fight me).

For manga that do 'know when to quit' a few of my favorites are Maison Ikkoku, One Pound Gospel, Victorian Romance Emma, Fullmetal Alchemist, and Rurouni Kenshin. The first three are under twenty volumes (MI being the longest of them at fifteen), and the last two are under thirty (but despite their length, they absolutely do not drag).
