Well, feelings can change. Clearly they didn't in canon, but a lack of romantic/sexual feelings at one point in time doesn't mean that there will never be those sorts of feelings. But yes, the fact that you can't see inside of Harry's head in the movies makes a lot of ships appear stronger.
