I'm kinda squicked by the whole "meet your soulmate at age 11 (or 10)" deal though, especially since it was so heavily foreshadowed all the way back in the first book.

That does happen sometimes though, even irl...(whether or not you believe in "soul mates", referring more to meeting someone who will later become your romantic partner)

Sure, it happens sometimes. But for Harry/Ginny, Ron/Hermione, other school people to have all married people from school and still be together in the epilogue? I don't buy it.

Who all was married in the epilogue besides H/G and R/Hr? /honestly doesn't remember

(ok George and Angelina, but I assumed that happened waaay later)

Also I feel like part of it is that they have a smaller community than the world at large. Which isn't to say they never marry muggles (obviously), but I think their socialization with them in general would be somewhat limited for obvious reasons.

Draco married someone named Astoria, Neville married Hannah Abbott, Victoire (FLeur's kid) is dating Teddy Lupin I think.

Basically everyone married their friend from school or at least their classmate. What people seem to forget is that it's completely realistic since every single Wizard in Britain goes to one school. Now, the fact that there are ZERO gay relatinships is what's weird.

Yeah, like I said - very small, limited community.

I don't know, JKR might have paired a lot of people off but she never really emphasized relationships except for those main two, did she? Having a gay pairing just randomly mentioned might have come across as tokenism. (She did, however, develop the backstory of Dumbledore and Grindelwald, though I don't remember if they were supposed to have been "together" or not.)
