There are things we expect in fiction, and when faced with a sudden out-of-the-blue turnaround of feelings like the books have Harry doing, it feels unrealistic because a gradual build-up of a relationship is more common in fiction.
Saving Ginny in CoS was in no way a sign of Greater Feelings. Harry did it because she was Ron's sister, and that it was the right thing to do. I expect if it was anyone else, he would have still done it because it was The Right Thing To Do.
How much does Harry really have anything to do with her before HBP? Not a lot, and frankly before OotP Ginny is practically a non-entity in Harry's life.
Probably the thing I find most unbelievable however is that a sudden teen romance like this (which I agree, they happen) ends up turning into a lasting marriage of 19+ years. That's the part I don't believe, just I don't believe Ron and Hermione's constant bickering is the sort of bickering that would turn into to romance either.
