Oh yeah, the thing about Spock being married/betrothed if according to TOS timeline at the time of ST 2009 bugged me too.
They addressed it in the comics (which are consedered canon as well for the reboot) with the girl being alive and Spock's pon farr happening and gave an explanation from Spock that he "absolved her from any obligation to him" when he left Vulcan to the Academy and thought that was end of story.
I'm not sure if I find it all plausible myself, but that's how it is.
