Curry can vary from the mouth blistering stuff for drunk macho idiots like Vindaloo and phall right down to the mild and sweet kormas. There is all sorts of spiced blends, and spiced doesn't mean hot it just means that it is richly flavoured. A byriani is a good one to start off with if you want to try making your own, its a medium spiced sauce with essentially meat fried up in rice. A lot of people find chicken or prawns to be their preferred meat in it, but mutton is the best.

A general rule of thumb is that tomato based curries are hot and cream based curries are milder. There are exceptions though. Also general rule of thumb is that hot curries tend to be one note as far as spices go as so many recipes are all about amping up the heat and the cooler ones have a more varied palate. Again there are exceptions, a really good recipe can give you that variety of sensation in a vindaloo and a really bad one will have a one note bland korma.

They are dead easy to cook at home though.

Interesting! There are several Indian restaurants in St. Louis (two hours away), so next time i'm there, i might have to give it a try.

My only issue with cooking it is that if i have to buy a bunch of different (and hard to find around here) spices that are expensive, and nobody likes it, i'm kind of screwed.
