Personally, I don't like most OCs, but I love almost-OCs, where a background or one-episode character gets their own story.

Actual OCs I like are either crackfic, like Enoby, or not the main character. I also like LotR Tenth Walkers, as long as it's not a Mary Sue. I have two: If I Really Went to Middle Earth and one called "Anachronism" by LadyScribe, but it seems to have been taken down from FF.net. Neither were finished, iirc, but still worth the read.

If you read Death Note Light/L, A Cure For Love (TV Tropes link!) has an OC that I think was really well done.

My favorite LotR OC fic ever was, I think, titled "Don't Panic!"; she didn't join the Nine Walkers, she didn't save the day, in fact she spent most of her time fighting to achieve personal hygiene and learn Sindarin and actually do something considered useful. It was pretty great.
