I don't really feel them as romantic yet but I can understand people getting on that train already. There is a certain fun to already being invested in shipping them, it makes hunting out 'moments' or developments in the relationship that much more exciting.

I mostly friendship it tho, at least until we know what's going on with Katarina.

This. I was WTF-ing the not!secret a ways back about how someone couldn't 'ship it because, to Ichabod, she's only been dead a week or so. I'm not seeing how she's definitively dead on the show to begin with; she regularly appears to him, is stated as being the 'captive' of the Big Bad, and the actress is in the main credits - clearly there's more story coming for her.
