I call my little sister a lot of food names. This morning I called her a sapote and yesterday I called her a perfect little slice of fried green tomato.

I think it's because sometimes I get this overwhelming feeling of love in my chest for her that reminds me of the feeling I get when I pull an eggplant chickpea lasagna out of the oven and it has the most wonderfully perfectly browned layer of melty smoked cheese and my family gets excited and my brain cannot express it so I word associate? I've always displayed affection for someone by feeding them so the concepts are closely entwined in my subconscious.

Plus food is cute.

By inspired I mean like always I fully intended to make this exact recipe but I am always too lazy to actually go shopping, measure things, or find the recipe on my kindle and so make an approximate based on my vague recollection and liberal substitutions?

I usually make an 8x8 pan so I get a small eggplant. When I slice the eggplant lengthwise I leave the skin on but don't use the all-skin bookends. I salted my eggplant with a small amount of sea salt and left it in a colander to drain while working on sauteing a red bell pepper, a medium yellow onion, and about five cloves of garlic in basil-infused olive oil.

For the last minute or so of the sauteing I tossed in the (drained) chickpeas to add a leetle crunch to them and then decided to add about two smoked hatch peppers cut up into strips.

Instead of tomato sauce I used about four ounces of homemade bruschetta on the bottom of the pan, layered that with strips of eggplant, covered with fresh chopped spinach instead of frozen, and dumped about 2/3 of the sauteed ingredients (red bell pepper, onion, garlic, chickpeas, and hatch pepper) on top before sprinkling feta over it. Then I layered more eggplant and covered that with bruschetta and the remaining sauteed ingredients (a smaller layer and no feta this time). Which I then covered with a very liberal amount of grated sharp smoked Tilamook cheese.

I have also tried this with smoked Applewood cheese, my family's favorite cheese, but we are in agreement the regular smoked sharp cheese was better in this one instance.

OH MY that does sound so very wonderful! I'm definitively adding this to my "to-cook" list. I only have two questions:

- You called it a lasagna, but... didn't actually mention any layering with lasagna pasta. Neither does the original recipe. Is it a pasta-less lasagna?

- You mention using bruschetta instead of tomato sauce, but every google search I do about bruschetta turns out a pizza-like appetizer. What did you mean, then? :3

We don't have hatch peppers here, nor the kind of cheese you describe. I think I can substitute the hatch pepper for merkén, but no idea about the smoked cheese. I'll let you know when I make it.

I don't think it's technically a lasagna but the eggplant = noodles?

I'm referring to the topping on the toast in the pictures you see. A basic bruschetta recipe is chunks of tomatoes, diced onions, garlic, and basil. I thought I mentioned I made a batch about a year ago and canned it so it's like a thicker, chunkier tomato sauce, sort of the consistency of salsa but on reread I think that part got lost while editing. Oops, my bad!

I really enjoyed the smokiness of the cheese but I'm sure any cheese would be delish and the merkén should still introduce that flavor.

Oooooh, that makes sense!

What you describe as bruschetta sauce sounds absolutely delicious, omg. I must try it now, as soon as we get ripe enough tomatoes 8DDD

I was looking and it seems we have smoked cheese here, just not the specific kinds you're referring to. I think it will be worth it to puchase them. <3 Thanks again!
