But is that (characters not having sex scenes) enough to identify them as asexuals?

I would assume that in OPs hypothetical gay asexual relationship the asexual part would be actually stated in canon.

I don't think so. There's a difference in characters just not having sex onscreen (but implying they do offscreen) and not having sex at all.
