I had no idea people did that. It's funny when I like a piece of media (so I'm familiar with all of the characters and concepts) but I've never been involved in the fandom, so I don't know how fandom tends to perceive all of the characters and concepts and then I'll stumble over something like this. Makes me wonder what else I'm missing.

Serious answer: I suppose because she starts out in the role of the traditional damsel in distress and there's some baggage that goes along with that in the cultural consciousness. Also, a lot of people who are fans of Star Wars grew up with it and probably identified a lot with Leia and Luke (as they were the youngest characters in the original trilogy) and thus projected certain aspects of themselves onto those characters.
