I do agree that Eren could have more self restraint and that this is tied into a lack of dicsipline. But I do think that he is a very focused character and has clear goals which he obtains for the most part (and it's never easy for him to do so) so it's unfair to say he has no dicsipline.
I also agree with you that the ending of the anime is a poor portrayal of his character.

You're free to ship what you want, but the problem only comes when you warp canon to fit a ship. For instance, it's okay to say that Eren and Levi could have a meaningful relationship, but to say that they already do is really pushing it because there is no solid canonical evidence for it. And I don't mean evidence for Levi/Eren being in love with each other (because there's none whatsoever) I'm talking about evidence that they care for each or at least inte other in meaningful way.
