I always figured the deamons forms were somewhat influenced by their owners subconscious view on animals

Since pretty much every animal has wide and varied personalities. I've seen aggressively territorial rabbits, smart chickens, cowardly dogs, affectionate llamas and all kinds. A species cannot be regulated to specific personality types.

Yes, I agree. And if you're in a society where people tend to think of people with dog daemons as loyal, obedient and not too smart, that's going to affect your view of both yourself and your daemon. Someone elsewhere in that world might think of dogs as independent, ferocious and protective.
