Because of Levi's popularity, the anime does tend to replace other people's scenes with Levi's, and just gives him more scenes/opportunities to say wise word and save people in general, which makes him seem like he has a bigger leading role in the Survey Corps.
Ugh, I'm too tired to describe it, but the anime tends to make fit him more into a typical 'hero' role. The last episode, and the ova that came out is a perfect example of it

Depends who had the original scene, though. If it was another person in the cast, I can understand being annoyed, but if it was a background character? I don't mind so much.

Besides, I never saw Levi as a typical hero, even in the anime. Even Eren, who would normally be the most typical shounen hero ever, doesn't seem like a typical one.

The anime didn't drastically change his character. It just gives him more opportunities to be heroic.
For example, this page here is the only moment Levi had during the Stohess arc in the manga http://view.thespectrum.net/series/shingeki-no-kyojin-chapter-052.html?ch=Volume+08&page=96
Contrast that to the anime, where he gets Nile/the military police to step down, rescues Eren from his titan form, deals with Jean, etc., etc. Dealing with the Female titan in Stohess was essentially under Hanji's command in the manga, but in the anime they pretty much let Levi steal the show
His character in the manga is a bit more of a 'follower', than a 'leader', if that makes sense.

I realize it sounds like I'm hating on the anime. I'm not, btw! But I'm just pointing out that the anime's portrayal of Levi isn't exactly the same as it is in the manga

That's totally fair! There really is no such thing as a 100% faithful adaptation, and there's plenty of times that I've preferred a manga to the anime just because I thought it was handled better. Thanks for answering my questions. :3

Didn't the OVA come from manga bonus chapters? Additionally, the manga is giving him his own fucking spinoff series, so if anything it's worse about him than the anime.

The OVA is from an extra chapter, but pretty much 90% of it is made up filler done by the anime team. (The original chapter was pretty short, and was pretty much just the scene with Ilse and the titan)

No. The spinoff series are Kodansha milking the story, not the author (he doesn't write/draw any of them, basically they are almost fanfics). Trust me, no one gives a shit about the spinoffs, most of us pretend that they don't exist and just read the regular manga.

You know it that Isayama only ok'd the spinoffs because the popularity of Shingeki is making him hella rich
