"Knotting" refers to the fact that dog pansies have a 'knot' (really some kind of gland) that forms at the base of their penis while they're having sex. It stops the penis coming out of their partner, making sure their sperm can get in and do its thing. This results in the two dogs being 'tied' together for a few minutes until the swelling at the base of the penis goes down and it can be taken out. Knotting appears in a lot of werewolf fan fics and it's a kink for some people.
