Personally, I find that when I know a character is going to die, while I might get attached to them, I still have that knowledge of what their ultimate fate is going to be and so I view them through that lens. Like, I love the character, but I also know they're going to die, so I prepare myself for that fact ahead of time. Then I'm ready for it when it happens and it doesn't upset me that much.
