This is (for all intents and purposes) every atheist.

I mean that's generally how normally human beings interpret labels of knowledge.

When was the last time you heard someone go "well actually I'm an agnostic keynesian, because what if we're all brains in jars, how can you really know anything about economics?!?!".

I'm guessing never, because that would be tremendously silly. What makes this different?

I think you're giving the people I'm talking about too much credit. However a normal person might interpret a claim of knowledge, when these folks they say they know, they don't mean they believe, they mean they literally know how the universe works and they're here to tell you how wrong you are about it. If that sounds ridiculous, then you know how I feel when dealing with them, especially in debate. Ask them how human beings could possibly know everything and the screeds they go off on are amazing.
