Oddly enough I prefer frozen carrots over fresh ones... As long as you know how to boil them (or well, not boil them) the correct way they frozen vegetables are pretty good, and fresher than the nonfrozen kind.

It was more a question of having to unfreeze them enough to cut them into smaller pieces so I could put them in the frying pan with the noodles, and I didn't feel like doing that.

Well, depends on where you purchased your fresh ones from, but for a lot of cases you're right. I was thinking of the ubiquitous Green Giant bagged mixed veg which I have a seething hatred of. Probably the only vegetable matter I actively dislike.
