A few things with the Ac series: brotherhood is a sequal game. The story isn't going to make much sense unless you played ac2. It's also a relatively old game, so it's graphics aren't going to be quite on par with newer stuff, and the controls aren't that bad... But it takes more than 5 minutes to get the tutorials for all of them.

Skyrim is okay, but if you're picky about graphics I wouldn't suggest it. Elder scrolls games are sort of known for having bad graphics and you can't use mods to pretty them I'll on consoles.
