I realise that most of my slash fantasies are just that: a fantasy. Never going to happen on the show, especially if it's an unlikely pairing.

Not all "fan theories" are delusional, see for example GOT fans trying to formulate theories about how things will end, based on what's already written.

Personally I think in the specific case of villain + hero made smoochie-face and rode off into the sunset to be the pinaccle of unrealistic slash fantasies (albeit pretty common). It would not happen not specifically because the characters would never go gay, but because it would be shitty writing that would reduce a good plot to a pulp romance novel.

To all of this, and I say this as a slash fan. There's a big difference between saying "This character never shows any sexual interest in anyone in canon, so I think it's reasonable to interpret him as gay" and saying "I don't care that Tony Stark loves to sleep around with women in canon, I THINK HE ONLY REALLY WANTS THE D"

One thing is perfectly reasonable and realistic and the other is not.

Much like they irredeemably fucked up the Xfiles with Mulder/Scully.
