...what'd you do to it? That's one of the things it's pretty hard to mess up, isn't it? I mean, chicken, tomato sauce, parmesan, bang in pan, bang in oven, take out when cooked?

Different kind of Parmesan chicken. :P It is mayo, Parmesan cheese, and bread crumbs. We added a bit too thick of a layer of mayo.

Yeeeeeeaaaaaaah I can't see mayo and heat working out well. D-: Try diced tomatoes, with a dollop of tomato paste (acd other spices you like), and real parmesan. Thin layer of tomatoes on the bottom, chicken on top, cover in the tomato mixture shave a thick layer of parmesan over the top, bake until juices run clear, when chicken is pressed with a fork? I never used bread crumbs in my eggplant/chicken/other parmesan recipes b/c I don't like them, but you would put those on the top near the end, to get crispy, if you're using them.

Huh? Mayo can be heated. People make hot dips with mayonnaise in them. It's fine. I'm guessing OP was using it to coat the chicken before rolling it in breadcrumbs.

Yep, I wS going to say, I make hot artichoke dip that requires a bunch of mayo. Never had an issue.
