I've seen some newer planes with docks, but most don't have them. Depending on whether or not you have a layover, you can charge them in your connecting airport. Most airport have lots of charging stations now with both normal plug and USB jacks.
ETA: My personal tip, bring an empty water bottle (since you can't bring liquids past security) and fill it up from a water fountain by your gate. The flight attendants will come around with water, but sometimes I drink it too fast and am still thirsty, or I want to put my tray table up but can't because the water's in a cup and there's no way to store it for later. (Sometimes they give out mini-water bottles instead of a cups, but usually it's cups.)

Honestly though, as long as you're not actively trying to make calls or use your mobile data, I think you're fine. I've forgotten to turn my phone off/put it into airplane mode many times and it's never been an issue. It just ends up really draining the battery.
So yeah. MP3 players, gameboys, laptops, and books are your friends.

I might even see if I can pick up one of those "big books of activities", like, the ones for kids maybe even? Or one of the fancier coloring books. Could be fun! :D
