If I sneeze or cough or blow my nose even once while on the phone with my mom, she promptly says "It sounds like you have a terrible cold! What are you doing about it?" Then she goes off on a tangent or begins to grill me about what I must have done/not done to get a cold--"I keep telling you not to go outside in that thin coat in this cold weather but everybody knows better than your mother." (The "thin coat" has a thick bulky wool lining.) She doesn't realize how unpleasant this makes it to talk to her. ("I only say this because I care about you. I guess I shouldn't care!")

Ugh, I'm sorry, anon. Doesn't your mom know that being cold doesn't cause a cold?

I've pointed it out--but that's when "of course everybody knows better than your mother" gets its maximum use.

You could always cover the phone's mouthpiece when you feel a cough/sneeze coming on. (Unless you're on a cell phone and can't adequately cover the necessary part.)

Alternately, you could interrupt her mid-rant and say, "Mother, I appreciate your concern, but this topic is closed." Then proceed to move on to a new topic. If she won't let up, say, "I'm not discussing this with you" then wish her well/say your goodbyes and hang up.
