Seconding automatic debits, although you need to make sure you keep enough money in your acccount to cover them, especially for fluctuating bilks like electric/gas or bills that only come up once or twice a year.

I went to an office supply store and bought a big, red stamp that says "PAID" on it and has a box to write in the date. It's really useful for helping to keep track of which bills are paid, especially since I pay some online through my credit union's electronic check system so I can't always tell just by whether the return stub is still attached to the bill.

I also try to file away paid bills and notices for automatic debits as quickly as possible so they don't get mixed up with newer stuff and I know anything still sitting out is probably unpaid.
