I don't think Ron would ever be happy with that. He doesn't have ambition, true, but he also has self esteem issues and an inferiority complex. And he grew up in a home with very traditional roles and while I don't think he would expect them to be exactly mirrored he does show some instances in canon of assuming those are normal. I don't think he'd be comfortable with the reverse.

Of any of the characters, Harry is the one I think would be most comfortable being a stay at home dad. What he wants most is family. I could totally see him retiring when his first child is born (no matter who the mother is) and staying at home.

Really? He has Spiderman levels of guilt about people he couldn't save. If he makes the whole auror training thing I can't really see him giving up.
