Hrm. I think because while she is annoying in both but at least in the first one she does more in regards to plot? So she has more of a purpose than "person who got possessed by evil red goo."

Yeah, that makes a lot of sense. At least in the first one, she did things no one else could or was willing to do. In the second, it could have been Darcy or anyone else, and the movie wouldn't have changed but for dialogue.
