Good question, it's not ever exactly specified, but umm...most likely different types of Asian/Indian? The world is based on Asian/Eastern philosophies and symbology, anyway. *shrug*

I think what the OP meant is just...not white people. And I understand that.

if the 'ethnicities' are non-caucasian, then what would be acceptable as casting? all asian? all black? all inuit? all what?

this whole think smacks me of racism in ways that are deeply disturbing.

No.
I think what the previous poster meant was that Avatar portrays a lot of different non-white races. So, in order to be accurate, casting would have to take that into account. Besides, what with make-up, costuming, and hopefully good accent training, you could conceivably have white, black, and what-have-you cast members without fandom pitching a collective fit...

If it's mine, I think you're interrogating from the wrong perspective.

It's not "all asian" or "all black" or "all inuit", but a mixture of different far-eastern races. If you want me to be specific, see examples posted below by rachelthedemon. I think you should find out what the show's about before snapping to a judgment so quickly.

Based on a lot of the political/historical/mythological references, I would say it goes something like this:

Fire Nation = Japan. The country itself is a chain of islands, and the way their justification for the war being to share the greatness of their superiority with everyone is a direct reference to Japan's so-called Greater East Asia Co-Prosperity Sphere of the 1940s. Plus, you have the Fire Nation's ties to the sun, whose patron Goddess, Amaterasu, is the principal deity of Japanese mythology.

Earth Kingdom = China. They're the largest country of the Avatar world, and Ba Sing Se is the spitting image of the Forbidden City. The Dai Li themselves are named for the head of Chiang Kai-Shek's secret police, who operated much like their namesakes. And the Earth King is a huge reference to Pu Yi, the head of Japan's puppet government during the occupation of northern China in the 1920s.

Air Nomads = Tibetans. Gyatso, Aang's mentor, was likely named for Palden Gyatso, a Tibetan monk who led the first Tibetan uprising when the country fell under Chinese rule in 1958.

Water Tribes = Inuit. Directly stated in numerous DVD extras, and rather obvious by their dress and locales.

Whoa. Seriously? I mean, the episode when Aang attended school in the Fire Nation reminded me of what I've read about World War II Japan, but all those other similarities...
