There is no source. Isayama never said Levi was in his 30's. One interviewer was trying to guess Levi's age and Isayama did not give an answer. Fandom just latched onto the interviewers guess.

Just like they latched onto Levi being French because the mistranslation of his name Rivaille, but that was debunked later.
