If you have intolerances to dairy as well, then my guess would be a histamine sensitivity, and I would suggest sticking to distilled spirits. All alcoholic beverages are initially fermented, but distillation results in a beverage where only the ethanol and some esters remain. You probably aren't going to find a wine or a beer to suit your needs.

The reason being is that - on the off chance this is an intolerance - every time you ingest something you are intolerant to you are potentially doing damage to your kidneys and liver (because it's likely that a protein component isn't being broken down properly which is difficult on your excretory system), increasing the acid in your stomach (which can lead to ulceration in your esophagus), and causing an immune response (which, over time, can lead to problems with autoimmunity).
Since these things are relatively easy to keep out of your diet, this is one of those "better safe than sorry" situations.
It's probably not something to worry about other than that. Stick to spirits, and happy drinking anon.
