Aunt Jemima? Oh god, no! No! Why must that be? I am so sad for your countrymen. :(

In all seriousness, though, I live in a place that's really weird about maple syrup. Like, I recently went out to breakfast with some people and they wouldn't use the table syrup because they couldn't be sure that it was "real." And there's a sugar shack nearby where you can volunteer and your payment for volunteering is a share of the batch.

It's as if it's a tenet of a goddamned religion, which explains how and why I know how to make it.

Wow, you definitely get the maple syrup props on this one then. That sounds amazing though, I've only had real maple syrup once in my life, when my dad was going on a health food-kick thing. (Maybe maple syrup is more of an Eastern Canadian thing, I don't know)

Aw. That's kind of a downer, because the real stuff truly does taste better, for all my protestations.

But on the Eastern front...I live in the Northeast US, so given our insanity, it would make sense for Eastern Canada to be more into the Real Maple Syrup™ thing. I mean, how could it not be? These trees, man. And this sap.

No worries! And why am I totally not surprised you're from Northeast US? Yeah, I'm betting that there's got to be some maple syrup craziness going on around there in Eastern Canada too.
I now feel inspired to try some real maple syrup again
