Well, first of all I disagree that the show's about Gwen and Jack - but I can see why you might say that, so I won't argue it. I do think you missed my point though. I don't mind Ianto's dying if his death serves a purpose other than "make Jack upset." Owen's and Tosh's deaths were different in that they essentially sacrificed themselves to save everyone. Ianto... not so much. The only thing his death revealed was how far the 456 were willing to go - which we already knew! If it had revealed something new about the 456 that Jack was later able to capitalise on to defeat the 456, that would have made more narrative sense. One small change - still a dead Ianto, but a better story.

Not to mention that it was just stupid as all hell for the guy to go in there. Jack can't die so the villain could throw what they wanted at him but he brings in his totally mortal boyfriend to say Fuck You to this supposedly ultimate killing alien race? What the hell logic is that?

Tell me about it! They should have given Rhys's job to Ianto, seriously. The thing I can't get over, though, is that they walked in without a plan. If they'd had an actual plan they really thought was gonna work, then Ianto going in with Jack could have made sense (because they weren't expecting the 456 to make an example of everyone in the building, after all). And hey, could have been a great moment there when they realise the plan's not gonna work, they're screwed, and that way Ianto's death is both poignant and makes sense! (Bonus points for what I suggested - that his death (or something he discovers before dying) paves the way for Jack to figure out how to kill the 456.) So much potential! So very wasted! I think that's what pisses me off most about his death, agh.
