The story of Adam and Eve is in the Old Testament so getting rid of it would essentially mean Christians rejected their own origin story. Plus, picking and choosing what to believe in the bible pretty much nullifies the point of religion.

I don't see why Christianity would need that origin story. As regards your other point, that's already going on with the OT, so rejecting this book would change nothing at all.
