But I also find it's because most of the time fics focus on completely different things from canon. That differing focus, if merged with canon, would be disconcerting a best. That's my best guess.

Except if we're going to go full crack, and have something like that Hogwarts castle/giant squid erotic porn be canon. That would be so horrific it would actually be great.
